At home there are two ways I make potato soup. This recipe is a variant of that.

    ingredients

    • 1.2 kg potatoes diced

    • 2 onions diced

    • 3 carrots, half diced

    • 300g diced celery

    • 1/2 leek sliced

    • 2 pieces garlic crushed

    • 2 liters of water

    • 3 pairs of sliced Wienerl / kind of hot dog – small sausage

    • 2 tbsp butter

    • 5 tbsp vegetable broth (powder)

    • 1/2 tsp ground cumin

    • 1/4 tsp ground nutmeg

    • 2 tbsp dried parsley

    • 1 tbsp dried marjoram

    • salt, pepper

    preparation

    • Heat the butter in a saucepan and add the onion. Fry the onions for about 5 minutes until they´re transparent.

    • Then mix in the carrots, celery and leeks. Stir well and mix in all the spices.

    • Pour the pot with water and bring to a boil.

    • As soon as the water is boiling, mix in about 3/4 of the potatoes and cook for about 25 minutes.

    • Then puree the soup and add the other potatoes and sausages. Let simmer about 10 more over medium heat.

    • Finally, taste and check whether the potatoes are already cooked and the delicious pureed potato soup variant is ready.

    TIP

    • If you don't like sausages try the combo with bacon.
