potatoes from the pan - with a difference
Recipe: Potato pan with vegetables

kcalA recipe that only consists of vegetables. It is suitable as a side dish or as a main course.
Ingredients:
- 1000 g
potatoes – quartered
- 2
onions – diced
- 1
yellow pepper – sliced
- 1
zucchini – half strips
- 300 ml
water
- 2 tbsp
water
- 1 tbsp
tomato paste
- 1 tbsp
oil
- 1 tbsp
pepper powder
- 1 tbsp
instant broth
- 1 tbsp
cornstarch
- 1 tbsp
parsley
- 1 tbsp
chives
salt, pepper
Preparation:
Heat the oil in a pan and sauté the onions until golden brown.
Add the potatoes to the pan and season with the paprika, stock powder, parsley, chives, salt and pepper. Mix everything and fry for about five minutes.
Stir in the tomato paste and top up with water. Cover the pan with a lid and let it boil for about 5 minutes.
Add the peppers and zucchini to the pan and cook with the lid on for a further 15 minutes over medium-high heat.
Place the cornstarch in a small bowl and stir in the two tablespoons of water. Until there are no more lumps.
Stir the water and cornstarch mixture into the pan and cook for about two more minutes. And the delicious, tasty potato & vegetable pan – with a difference – is ready.
Tip:
- If you want the sauce to be even thicker, you can simply repeat the step with the cornstarch.
