A recipe that only consists of vegetables. It is suitable as a side dish or as a main course.

    ingredients

    • 1kg potatoes quartered

    • 2 onions diced

    • 1 yellow pepper sliced

    • 1 zucchini in half strips

    • 300ml water

    • + 2 tbsp water

    • 1 tbsp tomato paste

    • 1 tbsp oil

    • 1 tbsp pepper powder

    • 1 tbsp instant broth

    • 1 tbsp cornstarch

    • 1 tbsp parsley

    • 1 tbsp chives

    • salt, pepper

    preparation

    • Heat the oil in a pan and sauté the onions until golden brown.

    • Add the potatoes to the pan and season with the paprika, stock powder, parsley, chives, salt and pepper. Mix everything and fry for about five minutes.

    • Stir in the tomato paste and top up with water. Cover the pan with a lid and let it boil for about 5 minutes.

    • Add the peppers and zucchini to the pan and cook with the lid on for a further 15 minutes over medium-high heat.

    • Place the cornstarch in a small bowl and stir in the two tablespoons of water. Until there are no more lumps.

    • Stir the water and cornstarch mixture into the pan and cook for about two more minutes. And the delicious, tasty potato & vegetable pan – with a difference – is ready.

    TIP

    • If you want the sauce to be even thicker, you can simply repeat the step with the cornstarch.
